If You Love to Eat Your Fish –
You Need Great Fish Recipes!
Not only do fish have healthy meat, they can also be very tasty when prepared correctly. In case you were not aware of it, fish is considered one of the healthiest forms of meat, providing the very beneficial essential, Omega 3. The secret to yummy fish is finding great fish recipes to try, until you find a few you can class as your favorites.
There are a few different categories of individuals out there. The ones that love fish, no matter how it is made, the ones who are not really fond of fish, but will eat it if it is prepared correctly, and the last category, those who refuse to eat fish, no matter how it's made! This article is for the first and second categories.
I actually fall into the second category, while my husband and 2 children would almost fit into the first category. They love fish! Me, well… I am very picky…I do NOT like when the fish tastes at all fishy! I am, in general, not a seafood person, as you might have guessed! So, I had to find fish recipes that I could enjoy, as well as the rest of my family.
Here is a fish recipe we found and tweaked until it passed everyone's approval, even mine!
I call it – Martin's Simple, Tasty, Crusted Fish 
Here is the process: Using freshwater (pond or lake) fish, fillet them first, then put them in salt water for 1 – 2 days in the refrigerator. Leaving them for 1 day seems to work best. After two days the fish fillets begin to get too salty. This recipe has worked well with blue gills, trout, bass, perch, etc.
Recipe Ingredients:
Saltine crackers, crushed into fine crumbs
Melted butter
Onion powder
Garlic powder
Black pepper
(To use the proper amount of everything listed here, guess according to the amount of fillets you have. I don't really go by measurements, since I don't always have the same amount of fillets. Guess according to your tastes, and change as necessary.)
Note: Do not add more salt, as the saltine crackers, butter, and the salt water they were soaked in gives them plenty.
Procedure: Preheat oven to: 475 degrees Fahrenheit. Have a large flat pan ready with a bit of melted butter in it. Tip: I set the pan with the butter into the heating oven to melt. Use pan size according to amount of fillets you have.
Melt more butter in a small pan on top of stove.( For 10 small fillets, I use about 3 Tablespoons butter.) You may sprinkle your seasonings into your melted butter, or sprinkle directly onto the fish after it has been rolled in the crumbs and put into the pan. I think the flavor gets into the fish more if the onion, garlic, and pepper are put into the melted butter, before the fish is rolled in it.
Put your melted butter into a small flat dish, using a size that will work with the size your fillets are. After taking your fillets out of the salt water and draining them, roll them in the seasoned butter, then in the cracker crumbs. You may need to push firmly on top of the fish in the crumbs to get as much of a crust as possible, turning them more than once.
Lay your fillets out in a single layer in your large, flat, buttered pan. Put into your 475 degree oven. I never turn it when it's baking because I do this: Put the pan on your bottom oven rack first, for 5 -7 minutes, then move it to the top rack, leaving for another 5 minutes, or until it is nicely browned, according to the size of your fillets. Thicker fillets may need to bake a bit longer, at a lower temperature, in order to keep them from burning, and to cook them completely in the center.
Enjoy! Be adventurous, trying different angles to this recipe until you have it exactly the way you like it!
